Are you already tired of all the pumpkin spice flavored coffees, cakes, and literally every food you can think of? Well look no further for a fall recipe that has nothing to do with pumpkin spice. Try this super simple butternut squash soup.
It probably takes about an hour to make and all you need are a few ingredients and a pot.
Ingredients:
1 Butternut Squash
1 Carrot
1 Onion
1 Apple
4 Garlic Cloves
2 Cups Chicken Broth
Cinnamon
Nutmeg
Salt
Pepper
Smoked Paprika
(all spices to taste)
I suggest sautéing the onion and garlic in a tablespoon of olive oil before adding to the pot.
Directions:
1. Dice the onion, carrot, apple, and squash.
2. Add all ingredients to a large stock pot on low to medium heat until veggies are soft.
3. Purée everything in a blender and add back into the pot.
4. Add a little bit of milk and any more spices if you need to.
(NOTE: the most difficult part of this recipe is chopping up that squash. I needed Jake's help to get started...)
That's it! Super simple and filling. Everything about this soup is good for you and you can add a lot of different ingredients for some varying flavor.
This would pair perfectly with some grilled cheese and cider.
