Pumpkin Savannah Bread


This recipe is a fall modification on my favorite banana bread recipe. Here's what you'll need:

Ingredients

1 Stick of butter

1 C. Sugar

2 Eggs beaten

7oz of Pumpkin Pie Mix (1/2 can)

1 ½ C. Flour

1 t. Baking Soda

½ t. Salt

½ t. Vanilla

1 T Cinnamon

A few tablespoons of cinnamon and sugar

1. Preheat the oven to 350ºF

2. Cream the butter and sugar together

3. Add eggs and Pumpkin Pie mix and combine well.

4. Sift together flour, baking soda, and salt. Add to cream mixture.

5. Add vanilla and cinnamon.

6. Pour into a greased loaf pan and sprinkle cinnamon and sugar on top.

7. Bake for around 50 min, or until you can poke the middle and it comes out clean.

For this recipe, it's a good sign if your batter is more on the fluffy side. Also, the more cinnamon, the better!

This bread is definitely more on the dessert side. It reminds me of a tasty breakfast bread, a perfect treat with coffee.

Another tip: I use pumpkin pie mix, because of the extra spices. I imagine using regular pumpkin would be more bland and you would have to supplement it with your own spices. But do what you want! It's all about the texture, the flavors can be up to you.
