This recipe is from the great, Mary Berry, judge on the Great British Bake Off.
"The secret of making good scones is not to handle them too much before baking, and to make the mixture on the sticky side."
"This recipe makes about 20 scones, or 8-10 large scones"
These are actually the very best scones. Sometimes, scones are too doughy or not sweet enough. These are almost like a homemade buttermilk biscuit, but these are heavier and sweeter; perfect for breakfast.
This recipe is measured in grams, so I'll try my best to convert it.
The best option, though, is to measure using a kitchen scale.
450 g (1 lb) - about 3 1/2 Cups - Self rising flour
2 Rounded teaspoons baking powder
75 g (3 oz) - about 8 Tablespoons - Softened butter
50 g (2 oz) - a little less than 1/2 Cup - Granulated sugar
2 Large eggs
about 225 ml (8 fl oz) milk
1. Pre-heat the oven to 400°F. Lightly grease 2 baking trays
2. Measure the flour and baking powder into a large bowl. Add the butter and rub it in with your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar.
3. Beat the eggs together and add in the milk to make about 8oz. Then set aside about 2 tablespoons of the mixture for glazing the scones later. Gradually add the egg mixture to the dry ingredients , stirring it in until you have soft dough. The scone mixture should be on the wet side, sticking to your fingers (this helps the scones rise better.)
4. Mary Berry says to roll out the dough on a floured surface and cut out the scones. BUT because the dough is sticky, I just took clumps off of the dough ball and rolled them.
*Do what you want with the shape, they will turn out delicious either way*
5. Arrange the scones on the prepared baking trays and brush the tops with the reserved beaten egg mixture to glaze. Bake in the pre-heated oven for 10-15 minutes, until well risen and golden.
I added tiny chocolate chips to half of the scones and they are SO GOOD.
The plain scones are perfect cut in half and topped with butter and homemade strawberry jam. The chocolate chip scones are great with only butter.
Enjoy!
